Katy's Kitchen: Homemade Granola


I love Lily Pebbles YouTube channel and a while back she posted a granola recipe that I have been mean to try out for ages. It is so easy to make and you only need five core ingredients that will probably already be in your kitchen. Plus it is super healthy and really yummy! 
Ingredients

  • 1 1/2 cup Oats
  • 1 cup Almonds
  • 2 tbsp of Coconut Oil
  • 1 tbsp Honey
  • 1 tbsp Cinnamon 
Method
  • Crush almonds in a food prosessor
  • Add crushed almonds with oats and mix together
  • In a small pot on the hob, melt coconut oil, honey and cinnamon
  • Add the melted mixture to the oats and almonds and stir until you have a slightly sticky consistency
  • Place in the oven at 180 degrees for 10-15 minutes or until golden brown
Make sure to keep an eye on the oats in the oven as they can burn easily, toss them about a little with spatula to make sure it cooks through. 

What is great about this recipe is that you can add more things like raisins or other dried fruit, you can switch honey for maple syrup or golden syrup, add crushed walnuts and so on.

I eat this with greek yogurt and cut up fruit or with just with some milk. It is the prefect quick, no fuss breakfast and a batch lasts for around 1 week.
